Week 47 Menu Plan - Using What We Have

Oops ... I apparently have lost county when I stated this was Week 47 and Week 23 .... It's REALLY WEEK 48 and WEEK 24 of Hubby's Unemployment Adventures.

Ahem.

It's that week. You know, where you slave away all day, 50/50 chance of a small family outburst expected at some point in that 10 hours you are all together, the day when you stuff yourself silly? It's funny, as a kid, and even a young adult, I was NOT a big Thanksgiving fan. Most likely because I was such a picky eater and there would be NOTHING on the table that I wanted to eat, so I'd just eat sweet stuff and call it a day. So sad when I look back on it ... that is why I've always made it a point to have macaroni and cheese or some other carb heavy dish for Sonny Boy.

As we are going to our friends this year (we rotate every year as to is the Host) I will be taking deviled eggs, kale salad, meat & cheese platter, green bean casserole, kale salad and something else ... along with the 2 turkey breast and a whole turkey for frying.  Hubby will make the stuffing and mashed taters, gravy and a baked turkey on Friday for leftovers.

Here's what we got planned for the week:

Sunday - Leftovers (fresh ground beef burgers from Saturday night only we will make them as burgers with mozzarella cheese and sauce that Hubby made all day today) ... we've decided to call them PIZZA BURGERS

Monday - Leftover ranch chicken and buttered noodles


Tuesday - YEAH Sonny Boy comes home! Tacos (salad for me) with all the fixins (made the meat on Saturday night and the rest of ingredients are in fridge)


Wednesday - really and truly do NOT have a clue ... I'd like to go out with the kids but somehow think we will be rummaging around for food while we get prepped for Thursday

Thursday - Turkey, what else?

Friday - Wanna guess? Turkey again! Poor Sonny Boy! I may go for it and make the Hot Browns aka Glorified Open Face Turkey Sandwich and get some new (and way better) pics!


Saturday - As I'm not sure if Sonny Boy is heading back today (to beat the Sunday traffic rush) or not, I will leave this open...IF he's still home, we will most likely grill out, burgers and dogs/brats (both in freezer)

Let's face it, living in Paradise does have a few drawbacks with the #1 complaint being ... BUGS. Yeah, bugs.  Mostly mosquitoes that can just ruin an evening of relaxation on the patio ... those pesky little guys can really do a number on you quickly!  Heaven forbid if you are one of those who are very sensitive to the bites (the Boy), you will have welts in no time. Smelly Shoe Fix!

Honestly, we have real good hygiene habits in my house, I can assure you of that! But, lets face it, living in paradise with 125% humidity can be a little trying sometimes ... my running shoes (which have NOT seen much running action for quite a while) get a little ripe smelling ... and oh man, you should smell the shoes that Hubby wears outside in the yard, patio, garage and boat that constantly get wet ... enough to suck the oxygen right out of your body ... whew! Then you have the Boy ... who works out pretty darn hard and doesn't always wear socks, nor does the Princess ... I mean, seriously, I've had to throw shoes away because you could smell them just sitting there. No one wants to be the person that people are wrinkling their nose at when they are walking by you! So when I saw the featured post for the Smelly Shoe Solution (and dang, I'm still trying to find the original post because I had no need to bookmark it, such a simple fix!) Yes. That's IT!

Rice Cooker - Hard Boiled Eggs

One of the things I picked up at Costco was a new Rice Cooker. The one I have, well, I gave that to the Boy when he went away to college (so he could make his macaroni and cheese), not to mention, it was small as heck, like mini size! So, I figured, you know, Hubby likes to make rice occasionally. The Boy makes brown rice in the microwave every other day and leaves the bubbly residue behind for ME to find when I go to heat something up (I hate a dirty microwave, totally wigs me out and sends me running for the windex!) ... so I grabbed the rice cooker ($29.95), a 10 pound bag of organic brown rice and a 20 pound bag of Basmati rice. I'm asking myself now, a whole week later, what the hell am I going to do with 20 pounds of Basmati rice? Anyways. Then I was reading the recipe booklet that came along with the cooker. They had one recipe that said to add the eggs, unshelled, to the steamer basket.  Ok. That made me re-read it a few times. Unshelled? Did they mean out of the shell?
