Getting Caught In The Wind

We've had that storm, DEBBIE off the west coast for oh, what, 5 days or so? Luckily (for me), I live in SOUTH Florida so we got all the rain and stuff on Saturday and Sunday as she went north ... still getting a few rain bands here and there but nothing like those up in the Panhandle.

But that's not what this is about!

Friday, met my dad at the doctors to discuss his sudden weakness and inability to walk or stand for more than a few minutes. Odd. She told us to go the ER and have him checked out.

Honestly? I was perturbed. Come on Dad, tough it up and just do it. I know. Sad. But I was having a rough week at work, busy and well, this just was NOT fitting into my plans.

So off we went to the ER. They ran every test possible on him. Admitted him as his blood pressure was a constant 224/156. Not good. His INR (from blood thinner) was at 4.6, so even if he was suffering a stroke, not so sure they could have done anything.

So I got home at 1pm. Following day, call the hospital. They are moving him to the cardiac ward, just to keep an eye on him. Suspected TIA, which would be his sixth in as many months. Not good at all.

So I called my sister, just to give her a heads up since she's in Missouri. Later that afternoon, she calls me back to tell me she will be flying in at 11pm. OH. I've not seen my sister in about 15 years (long story, drama involved) and was rather EXCITED but not so much ... I've got a lot of stuff going on.

It's good to see my sister. Even better to see my sister and dad interacting. I never thought I would see that again (family drama was heavily involved in the past 15 years) ...

My dad was moved to an Acute Rehabilitation hospital last night. He's doing well and I believe he will most likely be back to walking with his wheely walker within the next week. Hopefully, at that time, he will be able to go back to his ALF ...

So needless to say, no meal plan this week. Hubby is in Texas, Sonny Boy went back to Orlando on Sunday and Princess is working like crazy. I'm swamped at work and it's just a tad stressful ... but it will all be ok.

Mayo ...

Who would have thought?


4 (I think I should learn to count!) 5 ingredients equals that $6 tub of mass produced mayonnaise?




Seriously.


And it's so easy, even a Caveman can do it! I was so VERY psyched that this worked not only on my FIRST try, but the second time around too!


A few things that were pointed out at the site where I got the recipe which really does bear repeating:


Patience is key.


Room temperature ingredients.


And S L O W L Y drizzle the oil in ... you will definitely hear the difference in the processor once it starts to come together.


Did I tell you how giddy I was that it WORKED?????


I was a little upset that it was 'greenish' though. I didn't have 'light' olive oil the first time, only extra virgin (who uses anything else??) ... but it's ok ... Hubby loves the taste of olives and olive oil so he will eat it up.





Note: The 2nd time, I used the extra light olive oil, not extra virgin (fortunately, it was on sale b1g1f so yippee!). The color is much nicer this way, and flavor is way more mellow.


They were on sale buy one get one free, so $2.60 or so each bottle. I should go stock up!

 

Ready to hear how it went?


1 egg
2 tsp lemon juice
1/4 cup olive oil
1/2 tsp salt
1/2 tsp dry mustard powder
1 cup olive oil


Yes, I actually DID have mustard powder in the house. Not sure why, but it's a rather large bottle for such a little used spice.


Put the egg and the lemon juice in your food process and walk away for an hour or so. Seriously. See up there ... PATIENCE? In order for the stuff to incorporate and emulsify, it MUST be room temperature. Honestly, I had mine out for 2 hours the first time, 2nd time only an hour.



When it's all to room temp, go ahead and pour in the 1/4 cup olive oil and dry mustard and salt. Cap the processor, and let it rip for about 60 seconds til all mixed up.




While still running, stretch your pouring arm and flex it a few times to get the arm loosened up and slowly, slowly, ever so slowly let the oil drizzle in the chute. S L O W L Y.


The stuff will start spattering around and you'll be tempted to stop and scrape but DON'T GIVE IN, keep drizzling it through the chute.




Suddenly, it sounds like slapping. Keep drizzling.


And just like that, the whole thing changes. The sound, the feel everything will suddenly become a smooth hum. You are almost there. Keep drizzling. Ignore the cramp in you triceps, keep drizzling. This is nothing folks, keep drizzling.


When you get down to that last bit, RESIST THE URGE to just dump. Keep drizzling.


When olive oil is all emptied out, let it continue for about 30 seconds more. Turn off processor and flex arm.


Rub hands together, give an evil grin  to the Hubby and take off the lid.




Hot Diggity Dog!! Creamy. Luscious looking. I slathered some right on a piece of turkey and ate it. Yummm. Oh, how about some deviled eggs using the mustard powder along side?? Oh, I think I might be on to something here!


This made a nice size jar of fresh mayo. It should keep as long as your egg was fresh. What M says is to add 1 week to the expiration date of the egg on carton. I have a feeling it would last a little longer but if you follow food police guidelines, use that for your 'expiration' period.

Can you tell which is EXRA virgin and which is LIGHT?



Honestly, next time I think I will only make a half batch....whip the egg up a little and just use half of it. Just to be safe ;-)

Menu Plan Monday - Week 24

Sonny Boy is STILL here ... so that sort of changes the menu a week bit.

We are still trying to use what we have on hand, but of course, there was a Costco trip this weekend, a quick stop at Aldi's for my Dad on Sunday and Friday had a stop at Publix. All in all? A LOT. The Costco trip had a lot of NON FOOD related items (hair/shaver thing for the Boy, griddle for Hubby, 2 stainless steel tiki lamps, and a few other things) ...

Hoping for a simple week, a better attitude, better choices AND cooler weather so I can exercise a bit more outside ...

Sunday - Chicken (thighs), peppers, onions, shrooms and cherry tomato kabobs (with teriyaki sauce)

Monday - Simple Wedge Salad (plan on making my dressing tonight!)

Tuesday - Taco Salad

Wednesday - burgers (griddle or grill?) (hope to finally post the almond flour biscuit recipe)

Thursday - Mac and Cheese with Smoked Sausage (ummm....IF I have any in the freezer!)

Friday - chicken on the grill with veggies

Saturday - Hubby's choice ... we FINALLY did the steaks this past weekend so we shall see

Happy Hour Friday - Lemon Drops

I like my Lemon Drops PLAIN. Don't mix up that sugar or rim the glass PLEASE. I prefer mine as a shot for that very reason. We call these Girl Power shots in my house (it's about the girls gathering around the bar and shooing the men off ... amazing how they all just come out of the woodwork when they see females lining up the glasses) and I'm really excited to try and make them in a jello shot form very soon this summer!

The KEY to making a GOOD lemon drop is the chill factor. It has to be cold otherwise your throat will try to close up which will cause you to gasp, inhale the wrong way, and cough violently the remainder of the evening. Been there, done that and I can assure you, you DON'T want to do that!



I've also drank way too many of these a few times, so definitely pace yourself. YOU may not think your getting toasted, but all those around you will KNOW you are getting toasted.  :) Just saying!


I have tons of shot glasses but the Barcardi set is always on the bar ... I guess because I like the thinness of the glass and the way it flares out at the top?


Lemon Drops aka Girl Power Shots

4 shots of Citron Vodka ... used to be an Absolut girl but then I met up with Svedka and have since converted!
1 lemon, cut into wedges
Small amount of white sugar
 
Does it make it better that it's all natural?


Dump the vodka into a shaker filled with ice. Put on lid and shake, shake shake. Let sit for a few seconds to continue chilling.



In meantime, offer up the participants wedges of lemon that are lightly sprinkled with sugar.


Consider it proper etiquette to remove all the seeds prior to offering




Pour the vodka into shot glasses, make a toast, slug it back, bite the lemon (and eat the sweet lemon flesh)

Repeat. Walk away :)

As always, we strongly recommend you not drink and drive. If you got teens, now is the time to have them driving. Cab it or just spend the night.

Black Bean Quesidillas

It was suppose to be TACO SALAD night ... and I was excited about the new recipe to try ... but alas, I had to run out west (40 minutes from my office in pouring rain) to drop off some meds for my dad, did a quick stop at Aldis and then in between all that, Princess was calling to tell me her car would NOT start at the store. Thankfully (perhaps?) Hubby had chosen NOT to go to the gym, so he went and took care of her and the car.






Needless to say, by the time I got home at 8:30pm, they came straggling in after me and still not finished with the car. So I decided, at the last minute, to make something else.


Ummm. Not a 'big' deal, as this said it was quick and easy. Yes, it was. And yes, there are things I would do differently:


For instance:


1. Spread the cheese spread on inside of tortilla instead of trying to add after the fact
2. Drain beans more (I only drained the top bit off)
2. More seasonings needed in beans
3. Less bean mix in the quesidilla as they really spread while cooking. Of course, if they didn't have as much liquid, it may not have been as bad.




Either way, they were good, and it was an excellent way to use up the bag of coleslaw I got for 25 cents from Aldis...






Ready to find out what you need and how to do it?
2 cans black beans, drained
2 tsp cumin (definately use more)


1 bag of coleslaw mix
1 lime
2 tsp olive oil


2 wedges Laughing Cow Queso & chipolte
8 corn or flour tortillas
cilantro, finely chopped, optional







Empty the beans into a small bowl and add the cumin. Lightly mash beans and set aside.


In another bowl, add lime and oil, lightly mix. Dump the bag of coleslaw and toss (with clean hands) to coat. Set aside.






Take a griddle and place over medium heat. Add a little oil and let heat up.


In the meantime, spread each of the 8 tortillas with a 1/4 of the wedge of cheese. Add tortilla to griddle (cheese side UP) and add about a 1/4 cup on bean mix.




Fold over in half and allow to cook til one side is golden brown, flip and continue til golden brown.






Remove to board while you fix the rest.


When ready to serve, open each up gently and toss in a generous amount of coleslaw mix. Garnish with cilantro if using and serve up.






Princess came in and was like "yummm...what are those!?" even though she had just eaten before the breakdown! She ate 2 ... Hubby ate 4 I ate 2 ... I seriously don't think Hubby missed his usual protein, MEAT and they were pretty filling!





I will make these again!
