The year is over half over ... wow. I'm a little freaked that it's July and how my life has just been a whirlwind and constantly changing day to day. This being responsible (mentally and financially) for a parent is some tough stuff, both mentally and financially. But then again, it is what it is ... just thinking the Year of Zero may have to become a 2013 mission. Uggg.
So with that, we continue on the quest to clear the pantry and freezers yet again ... so far, so good. Basic stuff purchased last week for the 4th (corn, fruit, buns, etc.) and really trying to keep it all minimal. I did make a stop at Aldi's and got 3 pkgs of bagels (Sonny Boy and Princess will eat), cucumbers (for this awesome smoothie), avocados (for my latest obsession), onions (forgot I had a 15 lb bag or so left in garage freezer) and a few other odds and ends. Also picked up some Pelligrino (2) to hopefully offset the urge/craving for beer/wine with dinners ... really trying to NOT drink and well, it's not been easy with holidays, friends, family and just STRESS :) (um, yeah, it's NOT working very well at all!)
Sonny Boy is now coming home Tuesday and Hubby travels to San Francisco Wednesday and returns Friday (lucky dog) ... so here's what I got planned:
Sunday - Probably leftovers, fend for yourself type of food ... busy with heavy duty catch up cleaning and planned batch cooking (biscuits, crackers, chicken for lunches, salads for lunches, hard boiled eggs, etc.)
Monday - bangin shrimp ... had it on the plan before but never got around to making it ... need to do before Sonny Boy gets here as he has shellfish allergies and well, why take a chance? (shrimp in freezer, lettuce in fridge)
Tuesday - Sonny Boy home so probably quesadillas (modified) with chips and salsa (all in pantry and fridge ... will not have cabbage, maybe shredded lettuce from last night)
Wednesday - Burgers or dogs on the grill with the kids (both in freezer, may need buns) ... may just pull out the griddler thingy I have that I've not used much
Thursday - Chicken Stirfry (chicken in freezer, stirfry veggies in freezer). Most likely will be just me as Sonny Boy plans to drive back to school with MY suv to pick up his stuff and drive back Friday.
Friday - Hubby home! Chicken and veggies on the grill ... will offer up a pizza to Sonny Boy to ease him into the new eating routine :) (chicken in freezer, veggies in fridge)
Saturday - Pork tenderloin with rice ... (pork in freezer, rice in pantry) ... may go buy some mangos if I decide to make the mango salsa ...
